I think it will be difficult, unless you hire a programmer or something like that, your former employee changed all the information, only with him will you be able to recover your Hotmail. If it contains years of business data, you can decide this in court or try to reach an out-of-court settlement with your former employee.

If 2FA or recovery info was changed a while back, chances are low. Some users manage to solve it through MS support if the domain was tied to a paid business plan.
