So they are backing down a little bit, not bad not bad, they are not trying to get hole 25k right away, which is a good thing and this happens usually because they don't want to waste their time and effort into getting this amount. But to be honest shopify is kinda good to it's customers and remember they do what they have to do, so nothing personal.
Now, since you have business under LLC, ME AS A LAWYER, WOULD STRONGLY SUGGEST YOU TO FIND A LAWYER LOCALLY WHO HAS MORE EXPERIENCE IN SUCH MATTERS.
And let me tell you why, we Lawyers find gaps in every law, it's our job. Right now, you might be in good position because you have LLC but if you make a mistake while moving forward, guys like me will find that and use it to put you personally liable for your LLC debts. In a post above. I already gave you an idea/tip of possible scenario but paying 100-1500$ now, could be better than 25k.
And I am telling you this because, you need to be 100% sure.
Before you reply to them, find a lawyer and tell him/her hole case and DO NOT HIDE ANYTHING. And ask following questions.
1) What will happen, if you can't pay this amount.
2) Could this turn into a criminal case, if so in what scenarios.
3) What would be best choice for your LLC, shutting it down now or waiting for shopify.
4) Ask them if you have any chance to win this in court.
Here is documents that you will need on paper/images
1) hole conversation with representative
2) images of your shop and items that you were selling
3) LLC registration documents
4) Payments/statements
5) And any other document that you will find relevant.
Worst of the worst case scenarios, here is what you could do, call them and ask them to put you on a 100-200 Pound a month, but this option is would be last possible measure. But if you were to be put personally liable for this debt, they could ask for 25k right away and that would be a problem and no stashing things under relatives names would help, why? because other party will represent the papers where you tried to hide your assets and all of that will be void.
But if you don't want or can't afford a lawyer, than i would say 80% chances are that you will be ok.
