I have identified a few reddit threads that show up for my exact traffic niche, but they are about a year-2 old. Is it realistic to post my organic content with link as a comment in this thread and upvote it to the top? Or is this flagged behavior that will get me banned 100%?

If your account is old enough and has the required amount of karma, you can comment according to the requirements of each sub. However, attaching links in comments is very easy to get flagged and have your account restricted. Of course, old posts may have already been found at the top of search engines; if you can embed your promotional content there, it would be fantastic.
mods remove them all as spam the second a product is mentioned, I make it look very organic

If the post is trendy, and still getting upvotes, you won't lose anything if you do that.

Sure, go ahead, but contribute something useful; avoid relying on artificial upvotes. On Reddit, what works is providing value first, and the link only if it truly fits the conversation.
Commenting on old threads isn't the problem; what Reddit penalizes is any pattern that resembles "manipulation," mass posting of promotional links, obvious self-promotion, or even bumping comments with coordinated upvotes. This type of activity, if detected, will result in a shadowban. So, if you're going to do something, you'd better do it right.

While I don't think it's entirely 100% a guarateed banable thing, I wouldn't recommend trying to game old threads with upvotes. Whether you get any value out of it is another thing entirely. So the risk is deffo there and you might not get so much out of it in return. You could test the waters out if you have some disposable accounts you wouldn't mind losing though, otherwise it's still best to go for more natural approaches to growth.

It's risky, but mostly depends on quality of account. Especially if you add a link, basically giving reddit more suspicion on your comment.
