After each article I was interlinking to 2-3 of my other articles. Should I only link to articles that topically relevant? Should I link to my home page?

Yes, it's best if your links are relevant and connected to the original topic of the article.

If you are using WP, there is a plugin that would allow you to build an interlinking structure within your blog respectively - you just need to specify the keyword/anchor texts, and the link that the respective keyword is supposed to link to (the primary/intended article).
Interlinking helps the search engine understand your content better, and that would allow them to better prioritize your content when listing them on the search engine.
Thus, when a specific keyword is linked to a specific article, it tells them that the targeted article is the relevant article for that respective keyword.

Yes, the basic need of interlinking is to provide more information about that topic, existing already on your website. If you do it irrelevant it may increase your bounce rate. Interlinking relevantly will help you in all aspects.

How many articles if fine to interlink for say 1000 words?

Of course you can benefit from internal linking. It will work best!

Yes sure you need to link it to only your relevant pages. Relevancy matters a lot to google.
