Google is showing partial titles on search results and at the end showing my site name.
This is because rankmath is automatically adding site name at the end to all titles.

Can I remove the site name from the title without loosing ranking?
What are other implications?

I would reduce the your titles length but I would never remove my site title unless if and only if I have duplicate site titles will I remove one of them. From a user experience perspective, how else would users associate your brand with the valuable information right from the SERPs assuming you show up in first page for a query?

Also if they determine to go back to your site 2 days later but couldn't remember the exact site name (your site) and query they had searched for, won't you be losing a potential direct traffic (in the case that you'd strip off the site name)?

Agreed.
Can I remove for some blog post as they have longtail keywords, will that have any seo / ranking implications?

I prioritize good looking titles over site name. A good "stylized" title, clearly increases or decreases CTR. This is a fact. After any switch don't expect those title to change anytime soon by the way.
But if you have a catchy name that you want users to remember because it's a brand or something, it could be justified. Never my case, I don't handle branding.

Removal or addition of site name at the end of the title doesn't affect ranking. Your SEO plugin should have the option to disable the site name.

imo it doesnt affect, i always prefer disable that default feature since i mostly targeting long tail keywords

I do not use RankMath. I use Yoast and it has an option to remove the site name trailing at the end of the title. Removing site name will not affect the rankings, infact in my opinion it occupies the all important characters in the title.

So I just prefer not to include it at all. Instead I try to keep my main keywords towards the beginning of the title.

Since you are experiencing this problem, this is probably a good opportunity to lol into just how effective your titles are.

Brian Dean wrote a piece on effective titles.

Since there's only so much space people get for their titles and description in Google results, this really puts the onus on online publishers to put the right amount of time and effort into their titles.

A lot of people are under the impression that you just need to have the right keyword and the right description.

Given how competitive a lot of niches are, this approach simply doesn't go far enough.

It's a good opportunity, considering the fact that a significant chunk of your title real estate is taken up by your site name, to practice "title haiku."

You guys remember haiku from middle school, right?

You only have so many words to work with.

Make each word count.

The same goes for page titles.

Make them engaging and attention-grabbing while at the same time containing your keyword and calling your reader to action.

Admittedly this is not easy.

It's quite a tightrope you're walking.

But with enough practice, you can maximize the CRT of your title.

So instead of just looking at this as a pace problem, see it for what it is — an opportunity to level up!

This plugin have the option to disable the site name but keeping it will not effect your SEO.
