Hi, I have 2 questions , probably some of us will know the answer.

1. I will can copy a review message from a big brand website (e.g. amazon) and place it on my website with quotes ?

2. I can make a photo with some reviews from amazon (photo with Print Screen) and then place to place on my website ?

? Of course, I will write reviews about products but I want to know if I can make a pharagraph where I can put photos with reviews or reviews with the same product from other websites

You can, but make sure it makes up a small part of your page content as Google rankings depend upon unique content.

But what if I will post a photo (print screen) like I said in method 2 ? In this way I will can't have any problem about unique content but I don't really know if I don't break the Copyright rules with this. What do you think ?

That depends on if the image is copyrighted or not.

Is the review for your own product, or for someone else's product? Stealing a review from someone else's product and posting it on your product would be considered creating a fake review, which is illegal.
Posting a screenshot of a public website with a copyrighted image is covered by fair use unless you're doing it solely to duplicate the copyrighted image.
