What is your end goal? What features are you intending to go for? What does your server infrastructure look like?
Will you need live features such as chat/video?
Are current ready options available on the market not enough for your needs?
Is there a reason for going with PHP? Do you have existing resources with the same?

Laravel is a great choice for a custom dating site specially will be more secure, flexible, and perfect for profiles and blogs as you mentioned.

I will be all over the place, but it doesn't matter what the site is created in; it depends on how you can keep the spam profiles out of your site. I would suggest you try a white label as if you're going to charge people. There are tons of chargebacks, so the dating site can be a rough game.
