Have done a little FB farming and know the importance of an aged account there. But, with google there is no profile so how important is aged account with spend in google ads. E.g should Gmail be aged or ad account be aged and starting fresh what would success rate % be vs aged account in your opinion?

I'm just taking an educated guess here, but I think if your Google account is aged, you will have less issues. I would also imagine that if your account is a business account, like a Google Suite email account, you may also face less issues.

Lately Google has been asking us to verify our identity by uploading ID and business docs. They don't stop your ads though and they give you 30 days to complete verification. I'm not sure what to make of it but I guess they are becoming more strict towards advertisers.

Old is gold even in case of google and fb accounts .

But don't consider it as a success framula . If you are promoting something not loved by google or facebook you will be suspended .
