Someone wants a sponsored post/banner/etc on my blog. How do I make sure they don't threaten to sue me later for sharing content without their consent?

What kind of proof do I need? Is receiving the material from them through e-mail enough?

The email should be enough.

If you are this worried, get them to email you the content, banner, post, etc., from their business email to make it even better.

If they try anything, you literally have the paper trail for it.

Mostly mail confirmation is enough.
If you want to go further, you can make an agreement and get signed.

You have to let them sign an agreement stating that they allowed you to post their content on your website. Also, keep a copy of the conversation you had with that person.

I really don't think you should be worried that much about this, as I didn't hear yet that someone sued another person for that kind of a thing, as usually people that ask you for writing guest posts on your site, really want to do that and they don't have any other activity in mind, neither they would get much for suing you, as that's a pretty complex process especially when it comes to copyrights. But, if you want to be secure then you can ask them if they are giving their permission for you to publish their articles on your site and have them confirm this via email since that will serve well as proof that they gave you consent and that you had the whole liberty to do it, so you don't need to worry.
