Is any of that AI content? Everything to do with product review sites has been changing over the last few months because of the recent Google updates.

there have been 3 google updates this year that have targeted review sites, as you can see in here:

I don't know all of the details, but I did see a lot of folks around the forum mentioning that review sites are extremely hard to rank nowadays because google enforces strong EAT on these sites and they want you to record yourself opening up and using the product that you're reviewing, and this puts off a lot of people. Just look up some of the threads addressing this issue and you'll know more and hopefully learn how to approach review sites in these new circumstances

Review sites are a real challenge now.
A problem that others have had is that they review products that they've never used and simply copied the details from the Amazon listing.

Instead, you need to show that you actually know about the product. What do you like about it? As well as what you didn't like, and how you felt about using the item overall.

I've read so many review site pages from those that have allegedly tested the products and they read like shit.

Today I knocked back a supplier who wanted me to review one of their items.
The reason for the rejection is that they don't ship outside of the US and I'm in the UK so there's no way for me to write a proper review about it.

It sounds harsh, but it's a good thing that these review sites are harder to rank now, it means that the buyer isn't going to get short changed on a garbage product.

How would Google know if I actually bought the product?

Mate, you have to own the product for review otherwise you won't get in first place in google write an informative article and insert the affiliate link there.you can rank it

I have my own shop. I only review products that I have used or products that will benefit others. People get confused when they see the 2 or more same product but is from a different company or they get confused by looking at the price. I written Reviews for them.

You need original reviews instead of templating all the reviews.

Don't spam all h2's with keywords.

Add info articles in the mix.
