Simple question, when using either AMR to submit to article directories or SenukeX to submit to Web 2.0's, do we need to create a separate spin for EACH directory/Web 2.0 property? Just 1 spin per blast? # of spins per blast?

In senukex the software will download an article for you based on a keyword you enter, if you have TBS you just need to click one button and it's spun and ready to go.

You only need 1 article per blast. Of course you can use more if you want.

Can I write my own article based around my own keyword? Should I spin it into multiple copies before blasting?

The more you spin the more unique content you will get, this means that the better the chances will be of getting submitted and the less chances of getting punished via duplicate content.
