Specific location vs global

So there's this keyword that i want to rank, the problem is that it's a spanish keyword, and there's quite few big spanish countries out there, since google doesn't let me target let's say 2-3 countries will my keyword rank better in some spanish countries where it is more easy to rank and in others where there is more competition it will rank lower or how does it work when you don't choose a specific country any insigh on this? thank you.

In my experience, if you rank the keyword locally, it then has an easier time ranking globally as well, as you get more visitors to your website, more interaction, social signals, etc.
