I've been reading through a lot of tutorials and methods here and I've come to the conclusion it's advised to create web 2.0's on subdomains of high pr domains like wordpress

However, I also found out that subdomains don't even share the PR of main domain. So does it really matter whether we use PR9 wordpress or PR3 weblogplaza? Why is this such a common practice?

For content Promotion Web 2.0 is perfectly fine.. its passed the link juice so when their authority increase they will send you the authority so overall you got the benefit from your own property. Most every Seo person use Web 2.0 as their 1st tier.

google sees sites like wordpress as authority sites so any site that they link to, even if it is through a subdomain, will get a little bit extra trust than a blacklink from an unknown website.

web 2.0 backlinks are an easy a quick way to get good quality contextual backlinks, so thats why lots of people use them.

you can get PR to your sub domain if you do some link building to those properties. Having a article on high PR authority site increases your site's authority.
