My friend is partnered with a network (I won't say who) and his stats on Social Blade (on the low end!) are more than double the amount he actually makes!
For example, one day he made $2 and on Social Blade it says he made 6 to 90 dollars
Is he just with a shit network? And are these stats more accurate if you are partnered with Social Blade instead?

No the stats don't take into account Ad Block Plus or the fact that your ad network is boning you hard on a cpm basis. You might want him to see if his views are "monetizing" correctly.

He said it's with Maker? Aren't they the best though? Or does Social Blade pay more?

Those stats could probably just to lure in more people to partner with them. You can actually see a fine print that says, earnings will not be the same as the stats or something like that. All the views you get won't actually convert into clicks so it is very unlikely that he will be earning considerably more in a different network.

The earnings shown in SocialBlade are ALWAYS inaccurate.
And why not partner with youtube rather than partnering with another network ?

Socialblade is just a subsidiary of Maker so you won't make more by being with SocialBlade. I found the low end of the SocialBlade income estimate is quite accurate. I have a hard time believing anybody makes near it's high end estimate.
