I've noticed that one of Google's search operators doesn't seem to work for me anymore. Do you have another strategy for checking the size of a website by counting the total number of pages?

I just tried the site: operator that I usually use for that - I guess that is the one you mean, as it doesn't show the total number of pages anymore. What a shame!
You can still use the free Majestic backlink checker; the "Indexed URLs" value is a bit lower on the result page. But I guess there is a limit on how often you can use it per day, so probably not a good solution for large-scale checks.

If Google's search operator for checking the size of a site isn't working, you can try using site crawling tools like Screaming Frog or Sitebulb to analyze the total number of pages.

There are a couple of ways to check the website size:
1. XML Sitemap: It lists all the important pages the website wants search engine to crawl. Although it will not include all the pages especially dynamically generated ones.
2. Online tools: There are several tools online which provide rough estimate of the number of pages on site. https://sitechecker.pro/page-counter/ is one example of such tools.
3. CMS backend: CMS like WordPress there's a way to check the total number of pages given you have access to admin dashboard.
There's no perfect method that can show the exact number of pages, but with combination of multiple techniques you can a rough estimate on the website's size.

A paid SEO tool will give you the number of URLs that a site organically ranks for.
Of course, this is not purely accurate because you're looking for the total size.
But when it comes to practical terms, like in the number of pages you have to compete with, this should be good enough.

Screaming Frog or Sitebulb for a thorough crawl to get an accurate page count. Google Search Console can also help
