I noticed that when you send money to someone over paypal they get to see your first and last name. Is there a way so they don't get to see this? I'd be happy if they just got to see my email but not my first and last name!

No way to hide your Name. Just see paypal like a bank, they have strict restrictions.
If your want to hide your identity open a fake paypal account, there are few posts in BHW regarding how to start a fake paypal account.

You cannot hide your name. Its how the application has been designed.
If you really want to fake you identity do as said by @scorpion king

TIP: upgrade to a business account

your business name can be whatever, I personally saw insane names like funky guys, dressed up etc

your buyers will see the business name and not your personal name
