Should you use proxy for manual forum posting on niche sites? Can Google see your internet IP when you post as a forum user?

If you need to run 2/3 accounts using the same computer and the same forum then ip is needed I think.

No I meant one account per forum. This is not about the forum banning me, this is about if Google is able to see that all the posts/links from various forums are made by one and the same IP.

    This is just my opinion:

If you search the forum on Google with your IP/Proxy and then click on the forum link from the Google search results, they surely can track you.

I would use 1 Proxy / 1 account when it comes to posting on niche forums. - Just to be safe.

If you're really that concerned about Google tracking which forums you visit, simple bookmark the forums and visit them directly. Delete browser cookies first.
