Submitting sitemaps to GSC is not mandatory, but it to be done for a safer side.
Crawled & Ranking without submitting is quite good one, but anyways dont forget to do it

You should probably install the analytic on a safe domain. Use other throwaway domains to drive the traffic.
Just keep in mind that one site is gonna track you all over your existence so make sure it's the money site.

sitemap submissions makes it easier for Google to crawl your pages. It doesn't hurt your rankings. Go with it.
