If you don't interlink then for SEO purposes there is no need to get any other IPs. If you are doing anything blackhat those IPs can help reveal who you are and lead them to other sites you may not want affiliate managers and such looking at.

If you don't need to worry about this you are golden with just one IP. However interlinking can be very beneficial, even with newer sites, as they link love will grow over time.

If I were you and had similar blogs in the same niche I would consider interlinking. Even if you have only one IP I would interlink from one blog to another but dont link all blogs to all other blogs, be sensible with it.

I would say its better to interlink. a dedicated ip doesnt really cost more than $2 a month so it cant really hurt you if you have 5 blogs

Of course you don't have to use separate IP's for blogs that are not interlinked, but if all of your blogs focus on the same niche I'd strongly advise to link them, it's really worth spending a little money on dedicated ip (it's cheap).
