It depends if those page had visits or not. If not, you may decide to merge them or remove them. It doesn't really matter, removing a page without visits won't do much harm to your site, if you confirm deletion on GSC timely when the warning pops (the first soft 404 warning)
But if they are having visits I would not remove them, in fact you may be interlink and put some effort on them to integrate the better you can within your site.

Some of those articles are getting visits from Google, but most of them do not. Categories are not related in any way, imagine there are articles from food recipes to automotive and crypto.
What should I do in your opinion? Keep what is getting visits and delete what is not?

If the crypto articles are getting visits, I would try to think on how I could relate food and crypto to integrate them, specially for interlinking purposes. Those already visited sites, could be a mine of gold for other articles linked from them.

I don't know how unrelated the previous niche is, but if you delete those pages you would lose some link juice they had as a result your overall SEo authority would be impacted. Maybe not by much.

If they are not getting any traffic , then only delete them .
