i want to create a jewelry supplies-related website, I was thinking about the name of the website so I was wondering If I had to select optimized keywords as the website name or if I could randomly choose any name

I assume you already have a registered business name. I will suggest to go with that only.

If there's no registered business, you may use something like this - "City Jewellers." For example - Dallas Jewellery Shop

so I don't need to consider the high search volume and low competition keywords for the website name, I can select keywords with high competition as well right??
 
If you already have a legal business name, I won't suggest using texasjewelleryshop.com (just an example) as your web address.

Rest do your due diligence.
 
If it makes sense, insert it as part of your domain name, but it is not crucial to grow your business. What matters is providing high-quality jewels, writing useful content, etc. There are many many SEO factors that you need to implement, but the first one is common sense and really providing value to people.
 
If you already have a name, you should use it, and if you don't already сonsider a hybrid approach to get the best of both worlds, like "GemSupplyCo" or "SparkleSupplyHub".
 
Since your business is offline, and it is promoted by Google more than online things as is, you can really just use your brand name, and get some tags for the headings, cutomize your SERP snippet

I'd focus on reviews much more than on SEO ranking in offline business if I were you (but the ranking is also important, of course)
 
If you want to present yourself as a brand, choose brand name. Or try with keyword rich domain, it has some +ve factor, compared to another one.
 
Keywords in the domain name can be useful for SEO, but making your brand name memorable to others is more important. So, opt for some catchy names
