I have 15 websites per ovh first plan machine and i would like to know if redirect all my websites to cloudfare to my vps is a good idea or not.

It's very bad idea and pretty nice footprint for Google.

Well, most of CloudFlare IPs hosted various kind of websites including P@rn, Phishing etc due to which its clearly bad idea in terms of SEO practices. You can get additional IPs from OVH and assigned separate IP's to the websites instead.

Google can get ip of websites hide by cloudfare and take penality on it ?
What the limit websites on same IP ?

There is no such a limit set by Google and it doesn't matter even.... if hosted websites are legit and you don't want to hide your ownership identity from Google
