Selling my account - what is the procedure?

I found a seller for my 50k account on instagram, but I have an issue.. I've never sold an account before, so what steps do i take and what is the most important thing to consider? The guy thinks it's best for us to use PayPal and also he wants the e-mail that comes with the account. Also my main question is - do I change the phone number of the account before selling it to him or in other words before I sell it i ask him to give me his number so I put it into the account and then he verifies it. I'm also scared if he tries to "scam" me or put a claim on paypal that he didn't get the account or whatever crap people do.. I am thinking of screenshotting our conversations on telegram, but I don't think it's enough evidence..

Use escrow service, and ask for payment as family amd friends in paypal, so he will not be able to do any chargeback if he thinks of it.
