I posted a new website online and someone send me a email through the contactform claiming that they can see new websites. My question is : Is this possible? If so how can this be done?

This is possible cause this person has done it with my website. But still the question remains HOW? How are they able to see newly launched websites?

There are databases online that scrap newly registered names. You can subscribe and get that information.
