Example: Create 5-7 posts, Run an engagement campaign (Likess. shares, etc) for 3-5 days, then run the type of ads you want, because Facebook somehow knows your audience.
From the results you can check What works well such as Gender, Age, and Location, then use this data to target similar people and so on.
You must test and you must spend some money with no real results just analyzing

yes, I often use Interests and Demographics. normally 1st time I target based on industry report/research. Then I base on my previous result to target more effectively
