How does Google decide which image to show for my category page? The current image does not fit my goals, and I want a different one to appear. Could structured data or changes in page structure help solve this issue?

Google usually picks the most relevant image near the top of the page based on context, alt text, and page layout.

You can influence it by placing your preferred image higher, using clear alt text, and adding relevant schema — but you can’t fully control it.
 
Changing your page and adding proper structured data can make Google pick a better image for your page.
