So I saw that some of the demo themes have things such as:

or

However I can't seem to find how to add these widgets to my posts with rehub / elementor?

I have never used Elementor before so I don't know about that. But since it's an simple html table layout I can help.

For the first picture:
1) There are three table rows. With three columns (table cells) in each row. First cell/column has a picture second has some text and third has a button with some text on top of it and a picture below it. Since elementor is a drag and drop layout builder you can easily create all these features.

2) For the spaces between the table rows and columns and shadows you can add a little (around 15px) of padding with a border shadow (1.2px with 0.2 blur)

3) At last add a table caption and some Margin to overall table and you'll get the same exact layout.

For the second picture:

It's a simple layout with single row and two columns/cells and a table caption. With a large margin (around 30px) between them.

Save the templates and add the fields with dynamic update options and you are good to go. You ready to use the same template over and over again.

I think all of these are possible with Elementor but since I haven't used it myself so can't tell for sure. Every drag and drop plugins have these features.

Ps: I don't suggest using tables to create the layout since that thing is now a relic and people don't create layout with tables anymore. Also it's not good for seo. People now days use more advanced and seo-friendly methods to create layouts of the site.

Anyway if you need any more help feel free to text me and ask any website related questions. I'll be happy to help.

I see, I thought they were pre built templates since I have seen several websites using something similar, but I'll try to set it up

It could be prebuilt template. I don't know since I have never used Elementor myself. But you can try asking customer service about that. They'll tell you if it is pre-built template

You need a content premium plugin

Don't know much about how to achieve this with elementor. I haven't used elementor much. But the design from those images can be implemented in DIVI. I have used DIVI a lot so, this design can be done with DIVI.
