Registrar with G-mail!

Being that I'm still within my first couple months of PBN building - my very first purchase was two domains (in different niches) under one registrar (goDaddy). I used a fake gmail account to set them up - is there any recourse for this or are they pretty much dead sites at this point? And by dead I mean invaluable to my PBN network....

Please clarify your question, is it your gmail suspended so you don't have access to the domain registars?

I've seen that registering them with a Gmail account is poor practice and can lead to footprints. My question is being that I registered the domains on Godaddy with a gmail address - should I just scrap them?

Yes that is a footprint. Play on your own risk. Better leave them if they are not too important for you.
