Recommend me a good SEO course

Trying to teach my VA about SEO, mainly offsite SEO. Can you recommend me a good course for this. Thanks fellas

Doing white hat SEO in 2019 is hard. I don't think you need any special course, i would recommend to read some amazing guides from Brian Dean Backlinko and you will learn many important things and best strategies for link building. Then its all about if you can execute them yourself or you have big budget to pay someone do it for you.
