Question: does hiding your text with a "read more" button affect your SEO? Seems to be different opinions on this, online. Any help would be greatly appreciated!

So you are saying that you heard that Google has something in their formula to say:

"If read only link == image then rank lower than read only naked text link"?

It will have no effect on SEO, I suggest you lead the read more button to another page, as Google scores websites higher when a user visits more pages and will have a positive effect on SEO

No, it will not have an effect, use attractive content which makes users curious to read more and it increases stay time and interaction with the site.

Some people attach a google analytics event to the button click so it tells google there's engagement in your page.

Google uses these behavioral signals to rank sites. Which is clearly broken, judging by the trash serps.

It shouldn't if anything it could help your site by keeping people on your site longer and create more page views
