Well for a start what you're doing wrong is posting this in white hat SEO rather than in the programming section. You can find this stuff out easily with a search engine.

    1) Catch the submitted email
    http://php.net/manual/en/reserved.variables.get.php

    2) Open your file in append mode
    http://php.net/manual/en/function.fopen.php

    3) Write content to file
    http://php.net/manual/en/function.fwrite.php

    4) Close the file handle (important on a busy server, or you'll hit your server's open file limit)
    http://php.net/manual/en/function.fclose.php
