few seo videos that i have seen and posts that I read, is that you should not be using chrome in your off-page seo activities. apparently it leaves a mark which connects all of your activities.

any thoughts on this?

I'd personally stay off chrome for link building but I guess @TiagoS is right.. I'm paranoid.

A big lie in my opinion is that Google doesnt want you to do seo. If they wanted to, they could end half of all our projects over night. Google only cares about blackhat seo and people buying links when it interferes with their best interest and/or when you're making the Googling experience worse for the user.

Yes, it’s called Paranoia.
Not really paranoia.. googs keeps a lot of data from your online activity. It won’t necessarily link it together but a big project could trigger some signals and take you out of the shade:)

If mozbar was available for Firefox/Safari (last i checked, they didn't have an extension for Firefox), I'd use them for my link building activities.
Right now, I am made to use chrome due to that single reason.

YES they could if they want to. but honestly google is not the same company as before (Matt Cutts days). they have bigger plans, the company is huge now and the spam team is just a small team. They will not spend time, resource and budget spying on you building links !!
the algo now is going more towards bigger already established authorites (websites) anyways so they are sure they serve their users better (from google prespective at least). they will not waste their time with a small websmater.
