Question about IG api sheet

Is it possible, using an excel sheet, to monitor and collect, following/follower data day by day?

I mean... i need to make a sheet that collects day by day the new followers and following.

I need new follower/following details (or just the name/nick/handle) day by day or with the date of event...

I would like to understand how to dump followers periodically.

Some app on AppStore can do this: log in via instagram (web) and they parse the HTML content. But they are not working fine with >1000 followers (Instagram sees that you are doing too much actions and apply a cooldown period)
