I was working for a store that sell replicas of X product and then, he told me that we had to stop due to copiwrights, is there a way to bypass that or workarround it? as a plan to launch my own store selling Y product whose a replica as well.

You face the risk of getting DMCA-ed so it is up to you if you feel as though the risk outweighs the cons then go for it.

What would be the worst that could happen? My previous client told me somethng like "they emailing me to stop otherwise they would sue"

No workaround. You can set up a custom shop with crypto as a payment gateway.

Because regular payment gateway not going to allow your site or business, even if some allowed it somehow, they will be forced to shut down your account sooner or later.

You are going to mess with big giants and you don't have knowledge about how it works, better do some research before jumping in.
