I don't know. I think that if you have an authority site it will get crawled more often (daily or even hourly). For smaller sites it could take weeks. But the crawling is just the 1st step. The 2nd step (and probably the more important one) is for google to update its cache with the new info, but how soon this happens I don't know. Maybe someone else can clues us both in

You are thinking right. You can safely update the AI content with additional value - more keywords, images, and video embeds. It will definately help that post rank higher provided you have optimized it well. As far as crawling is concerned, once you update the post, make sure you re-submit it in GSC for re-indexation.
Of course I want to improve content and adapt to the current situation, make more readable for people
