Purposefully Deindexing Content Question

I recently started a website and hand wrote a ton of great content. However, I didn't plan ahead and my url structure is awful and I think I made my niche way to wide. I'd like to break the content up and give each category their own separate sites.

So my questions are:

Is there anyway that I can get the content deindexed and reuse it without penalty?

If so, how?

I tried to find the information here but it was difficult to find a straight answer.

As far as I know you can use rel=canonical header tag to tell googlebot which content should be ranked.

Just take the content off your site and it will eventually be removed from the index as well. You can reuse it.
