Might have forgot some who I really like, especially since I almost forgot Uma Thurman. Thing is it is impossible to pick just one because each of those above I've seen play at least one exceptional role. They might have had many so-so roles but for that one exceptional role they are in my book. For example I don't find Angelina Jolie's roles to be that great because they are mostly around her beauty and her sexuality. I did enjoyed her a lot in Beyond Borders though.
