There might be some penalty on the expired domain. That is one of the risks always associated with them.

It seems like there might be lingering issues from the domain's previous use. It's essential to check for any penalties on the domain, ensure the on-page SEO is properly set up, and submit your new content to Google via Google Search Console for indexing. Also, make sure to update the sitemap and robots.txt files to reflect the new structure and content of the site. It might take some time for the old URLs to drop off and your new content to get indexed and ranked.

Bought an expired domain, Lots of urls are still showing and ranking.

The domain was used for selling local foodstuff in my country,
The owner abandoned it and moved on to another domain, still selling same food stuffs.

I registered this domain, wrote contents and my content are yet to get indexed for days now. I don't know why.
You will have to wait because indexing is not a short term or instant procedure.

Build a proper internal linking structure, promote the articles on social medias & build some high quality links. Also, make sure that the pages won't have no index tags.
