my client saying "is there quick ways to get organic traffic/ conversions without having to wait for the google indexing ? we cant really afford waiting and hoping for google to rank us which can take more than 6 month.." is it possible

It is called Adwords
You pay to have the top position

I do agree @Mrnewbie we can do that alongside we can also engage on things like social media marketing, influencer marketing, writing Guest Post and actively promoting online contents.
 
Use social media to share content and engage with your audience. Twitter, LinkedIn, and Instagram are great for this. Try content syndication on sites like Medium or LinkedIn Pulse to reach new audiences. Engage on Q&A platforms like Quora and Reddit to establish authority.
 
Completely fill the Google Business Profile including updates and events, enter nearby locations and post articles in Google maps, that should give you some initial boost. Also dont forget to get business citations.

Quick clicks might come from social media and influencers, but for steady traffic, good content and SEO need time – it's like planting seeds and waiting for them to grow

U think if I put all 500 in for the AdWords, I’m going to get enough sales to keep paying the marketing costs from then on ? Or does it have to be like 700 / 1000

When done properly, a Google Ads campaign would earn more than it spends.
In theory, once it's positive, you can (and should) scale up, unless there's a cashflow challenge that prevents you from doing that.
 
It isn 't possible to rank just like that in SEO. There are ways and proper procedure to follow to rank up in Google.
 
Building organic traffic quickly without relying on Google indexing is challenging; focusing on creating valuable content, engaging with your audience, and utilizing social media platforms can help generate faster results, but sustainable growth takes time and consistent effort.

Adwords or google ads requires someone knowledgeable in the field to properly execute.
But as far as your answer goes, it is exactly as @roydan mentioned, a good campaign will be yielding more than you spend.
