We cant take responsibility on old videos since you might have used other services on it and when YT makes a patch it can affect your video. We can take full responsibility on a fresh video uploaded by us and it wont be removed by any of work done by us on it.

Adsense safe yes, just remove monetization while we are working so google doesn't count any invalid clicks etc, you can activate after work is finished.
