not a must one. either in your niche or should be a general niche domain.
If its totally unrelated mean, you would get hurt.

keyword in domain name is not "topical relevence". Building a tech niche PBN site for a tech site would be way-way better than a cooking site.
So topical relevence do matter in content... But just having keyword in domain name doesn't matter much nowadays.

Yeah as you said it is an extra plus when the expired domain contains your targeting keyword, it easily helps to boost the SERP rankings.
However, in most cases, it is hard to find this kind of expired domain so if you can't find it then move with some other expired domain with a good backlink profile (related to your niche).
