Is it correct that all of the information used when signing up for hosting is private with the exception of the email address used? If I want to sign up with ten different hosts, to avoid a footprint, do I need to use ten separate emails?

I think No, it is not like as you are saying. Use Who.is for more and efficient details.

No hosting company would give out even your email address. But the only place where it might be visible is in hostmaster email if you are using cPanel. White running a dns check, a person might find the email address. Some hosts use their original hostmaster email. If you use cloudflare etc. they will use their own email too. So, if you want to safe on that part, you can use different email address. But check running a sample domain in that host in a dns checker such as intodns.com before deciding on using all different emails.
