Depending on what type of payment you received and from where, it can take as many as 3-5 business days to complete the transaction. That said, Paypal will post an approximate exchange rate, then once the transaction is finalized, it will reflect the final rate.

No I guess OP received amount in his main balance. But i think he has not converted amount in euro may be that's the reason why the variation happened.
