Stripe is best but it could be worst at any stage of your business , can hold your funds and can get you out of the business, so always have backup accounts ready either some direct payment processors. or gateways.

Stripe or 2Checkout. Paypal favors buyers, so if they choose to open a dispute on you, they will get back their money. So I wouldn't suggest it but you can try it as well.
what do you mean by direct payment options?

Gumroad is more suitable for products like ebooks. The fees is on a higher side though. I'm always skeptical about mainstream payment processors like stripe when you're selling digital products. They shut people down too easily.

They payout to your bank directly but that is limited to a few countries. They also payout to your paypal.

For Woocommerce I would recommend Stripe and Paypal, but if you are looking to investing big, get a direct bank payment as other gateway might hold you funds for quite some time
