Organization methods as you scale?

Just wondering how people keep projects organized and how to manage them as they grow.

I have 2 main projects at the moment and each has several different marketing channels with different accounts, lots of content getting produced etc. I have one VA but I think I'm not using them as much as I could.

Any suggestions for how to organize and manage everything? Spreadsheets? Airtable? Open to any suggestions and also curious what other people here are doing.
 
When it comes to organisation, I only have one piece of advice, and that is to write everything down somewhere, and then in addition to that, make sure that the way in which you categorise everything is consistent across the board.

For example, I do video editing primarily and thus have to keep a bunch of video, photo, and audio files for each project, organised in such a way that I can easily reference or reuse any piece of media at any point so long as I know the project to which it belongs. You can use a third party service to help, but that is not necessary. Organise your information hierarchically and do not be afraid to use custom/unique codes to differentiate different kinds of information. An example of this is with my sound effects. I use whoosh sound effects and might call an mp3 file "ZW Deep 1x (LO) (R)" which describes a Zoom Whoosh with a Deep or low pitch playing at 1x speed in Reverse (LO) and with an added Reverb effect.

Of course, I have a text file detailing what all of these abbreviations mean, so I never forget, but I never forget them anyway. Sometimes, I even write things down on paper because I tend to remember things better when I have to physically write them out. That is the wonderful thing about organising yourself. You get to decide just how overboard you go with the organisation process.
