Long story short, I am thinking about creating an online SEO course. Think of it as KhanAcademy, but for SEO.
All lectures will be free, all content will be free. No ads, No signups. The content quality would be great. No BS.
If I get a good response here, it will really motivate me to go and get this done. So what do you think?

All and any suggestions are welcomed, about every aspect of this course.

I've considered and started doing something like this for total newbs in SEO, but then got carried away with making money and it's been sitting around. I think it's a great idea - I was planning on going the free route as well (and then later develop tools/resources that people can use for free or pay for extra features/etc.).

This is a good way to promote your SEO services - teach them to do it for free, but when they undoubtedly get lazy, they can hire you to do it.

What would you teach if how I do SEO is different than how he does SEO which is different than how she does SEO?

We're essentially bug testing ranking algorithms. Things aren't set in stone, this is all an ongoing and developing science.

And how would the lessons be different than reading about SEO, looking up videos, or reading guides and ebooks?

I've always seen teaching SEO and making a site other than a forum dedicated to information and the teaching of SEO the same as making a site that discusses the latest diet trends or whether eaten cholesterol is good or bad for you this year. It's pretty much gossip, and when you read enough sites and see enough videos and hear enough gurus saying the same thing as one another while their readers and viewers still have problems ranking and understanding, something is wrong with the material that is taught and transmitted and the teaching SEO segment as a whole.

Please give some info on how you will make your idea different from what already exists.

I couldn't have said it any better myself. I agree with you 100%.
How will I make myself different from what already exists? I think I would pretty much ignore what already exists for the most part, I wouldn't be inspired from it. I would discuss what I know for sure, not what some famous SEO blog has told me. A highly polarized and opinionated take on SEO. As you said, its pretty much gossip. Too much complex data.
What I would try to do is first make the user understand that nothing is set in stone, we only have an abstract idea of how it all comes together.
It all starts with the basics, making your site and its content easier for Google to crawl and index.

The next thing is providing a nice, clean interface for newbs to gauge how far they have travelled down the road. Once the basic framework is clear in their mind we could start with the much more complex part of deducing what works and what doesn't. What motivates Google to release Panda/Penguin updates. What search engine's try to accomplish with their updates. Not just what we should do to rank our sites, but how search engine's work. The rudimentary parts of a search engines and how it functions in a fundamental way. A telescopic vision instead of a microscopic one.

I don't have much clarity either, as to how I would advance after the basic sections. It would inlclude lots of guests posts, to try and capture the whole spectrum of how people are actually doing it, and what the future holds.

    Critique?

Well I can tell you such information is in high demand. I teach people all sorts of things and SEO is always a crowd pleaser... anything that can help a business increase their traffic is HIGH demand.

As far as you idea goes... maybe a SUPER guide with lots of affiliate links? Embedded Examples? To the point video.. not the BS 1 hour videos that don't say much. Just my 2 cents.

Good idea but it's good to use some ads or affiliate links. Helps you not to loose your interest.

I am taking inspiration about the course structure from Coursera. Everyhing would be divided into weeks. Bite size videos of 15 minutes max + Homework :p.
Review and a short quiz at the end of the week.

You know what they say, those who can, do and those who can't, teach.

That is true if you are doing it for the money. I am not doing it for the money. I might be doing it for a little branding of my company, but not for money.
Steve Wozniak teaches kids in elementary and primary schools. Does that mean he is not good enough to be in tech?

if you want to give back, then write a guide and provide it to everyone for free.

if you want to make money/build brand then it's just another niche.
