Hi, the shopify apps developed by these self proclaimed ecom gurus, when one uses such app for their stores, is it possible that the developer of the app can see what products the app users are selling?

Same goes for theme devs and they can see their customer's stores?
 
Interesting! I've thought about this before; maybe they are adding FB pixels or other "data mining" stuff into free apps and themes. Would not surprise me, and it's pretty clever from a blackhat point of view.

I'm not 100% sure, but I can't see why not.
  1. Release niche-related themes, for example "Dentist Wordpress Theme"
  2. Add FB pixel/whatever into the theme files
  3. Farm dentist leads from others websites
  4. Profit $$$

I don't know anything about that as I don't follow "gurus" or use Shopify, but sure that might be a possibility. Are the apps completely free, or do they also have a paid/premium option? Either way, gurus makes money of their "clients", so it wouldn't surprise me if they did something shady like that.
