My website has over 2k backlinks with 9% of them being for the main keyword I am targeting and the other websites on the first page have right around the same domain age, most have 0-5 backlinks, but somehow my website is on the bottom the the second page. CheckPageRank.net says my websites backlink PR quality is "Strong" so basically I have no idea how I am not on the first page. Thanks a lot!!

This is a really broad question and will probably need more details to answer the entire thing, but here are some first thoughts.
Firstly, in todays age its quality over quantity. I've seen sites with 10 backlinks outrank sites with 10,000. I wouldn't trust some website that says your backlinks are strong, that doesn't really tell you that much information. IMO most backlink analyzers give too much weight to the quantity of backlinks. Rarely do you see the site with the highest metrics actually rank at the top. Is it more likely too? Yes, but it doesn't always happen.
I looked at the specific backlink checker you used and its evaluating the page rank of your website. Google stopped updating page rank 3 years ago, so it's a completely useless metric.
There are a ton of factors you have to take into account. Your anchor text ratios sound good, but what type of links do you have? Is your on page SEO done well?
Also, when I see people ranking with fewer links I'm more worried than someone with a lot. Good SEOers will block Ahrefs, and majestic from finding their PBNs. They could have 50-100 links that you just don't see or the 10 links they have could be ridiculously good.
Either way the way you are trying to evaluate a site with the wrong approach.
But how realistic is it that all of these sites that show very few to no backlinks but have hidden links? And yes I know Google stopped updating PR but I would still think that backlinks with decent PR would beat out sites with no links. Also my site has been 3rd spot (first page) on Bing for the keyword for a month but still 2nd page on Google. Thanks for your reply.

What is the anchor ratio like for the 10 sites on page one - ie how many of their handful of links have direct anchor?
Maybe you have too high percentage of direct anchor?
Also maybe/more likely you don't have enough high quality links? As said above, I would try ordering a handful of links with really good metrics, see if that bumps you to first page...

I agree. It's unlikely all of them are hiding their links. However, some of them could be using tiered link structures or be a lot older. My guess is they just have some quality links that you don't have. If they only have a few links, then try to duplicate the ones they have.

in general the best advice for ranking is:
- get continual link building
- build some articles backlinks
- make much backlinks for these created article backlinks (it called tier2 - link pyramids)
- get some other domains, from all domains you will able to get from
- don't stop building links, for example you may make weekly 100 links, or weekly 5,000 backlinks, so stay doing that for few months
- if you can get some senuke "the full monty template" campaigns, then this will be great, it will really help much ^^
- at last social signals, such as facebook shares, Google+ is really important to get fast rank
