Noob pixel question

Hey I am completely new to FB ads etc, I have been waisting a lot of money with trial and error through many different sites and products.

I am wondering if I want to make a new store with a new product, how does my pixel not use old customer information from old ads and sites? I don't see how to make a new pixel, or a "fresh" pixel for the new project.

Create a Business Manager —-> add all assets (Pages, ad Accounts, Katalogs etc. ) to the Business Manager and under Pixel you can create up to 100 pixels. Just make sure that you assign all assets to the right Ad Account and the right person.
