Start with Niche site, you can grow it to a general site unless you have a large budget.
Don't worry about domain name , there are ways to switch domain without loosing traffic.
 
Niche site of course it’s way easier to keep focused the internet is packed with enough distractions I need to laser focus on one thing at a time but I do both general and niche I love niche sites more though, to each his own.

What do you recommend for doing this? Just throwing up a new domain on a new host and redirecting each page for a few months to the new URL?
 
Niche site is easier to focus in one or some products, also promoting that is easier too because you will have custom interests on ads. Having a general store is good too but more difficult to convert. Maybe you can do a general store for a specific country because these stores are very saturated.
 
What if you are a news agency? Its not possible that all the time there would be some news regarding that topic.

Depends on what purpose you are running the site, for affiliate marketers a niche site is the best option, for a news website a website that covers various general topics can work great.
 
Make a general store >> test all types of project >> choose the best selling one >> make a niche store around it >>> repeat
 
The best way of looking at is this:

Do you want customers not knowing what they want or if they even want something in term of purchasing something when they get to your site?

or

Do you want your customers to know exactly what type of product they want, that they want it becauyse they are looking for it in terms of purchasing something?



Number 2 option will ALWAYS ALWAYS be the best option UNTIL you have great organic traffic and/or your website is well known etc. So example Amazon makes more money as general sell everything type of site because everyone knows amazon. my website https://dealsfound.online if it was up and running as same thing woudn't be making shit for money. But a niche website that isnt well known but is ranked in google because its a micro niche or nich website could and probably is making some money because again you have a customer that is loooking for a very specific item and that they want that item. So they are currently in the search for that item.

Niche site is easy to setup you focus on a given niche/keyword/topic and it's easier to rank.
You can also scale it to a general site with time creating more content once it shows some success.
 
Niche sites are chosen as the relevancy matters in ranking.
In profit side, Niche sites are more profitable than general sites.
